Pepper, Cayenne, Industry Brewing, Thyme, and

the restaurant, then hear first-hand how he
transformed the old Block and Kuhl Building in
the heart of Peoria’s downtown into his latest

Join Dr. William Lally for a fascinating look
inside the world of forensic science at Illinois
State University’s new crime laboratory. During
Camp Wokanda: The Art of Maple Syrup
Wednesday, March 25
9:30 a.m. – 2:00 p.m.
Travel to the bluffs above the Illinois River for a
sweet adventure at Camp Wokanda. Known for its
rich history and 316 acres of woodland, the camp
transforms each year into a hub for maple syrup
production. During this outdoor experience, we
will take a guided walk through the "sugar bush"
to learn the science and history behind tapping
trees. We will visit the sugar shack to see the
evaporator in action, watching the fascinating
process of boiling clear sap into amber syrup.
Of course, we’ll finish with a tasting of Camp
Wokanda’s fresh, pure maple syrup.

Princeville Clydesdales Breeding Farm

Join us on this visit to a Clydesdale breeding farm
in rural Princeville that houses 20-30 adult horses
year-round. We should see some young foals
as we learn about the complete operation and
its partner facility in Canada. Our host, Kendra
Knobloch, will explain breeding, foaling, sourcing
food, medical care, training to harness, showing,
and even what happens to composted manure.
